Bak Kut Teh · 肉骨茶
Simmered gently for two days.
Spare ribs and soft-bone ribs simmer for two days in a herbal soup with whole garlic cloves and Chinese herbs, until the meat slips off the bone. A signature from a chef who grew up in a family bak kut teh shop.
Eat it your way
Dip the ribs in our house black soy sauce, made by reducing tamari.
Dunk the fried dough sticks (youtiao) in the soup.
Eat the meat with rice, or soak the rice in the soup.
